  • ½ tsp ground cinnamon
  • ¼ tsp salt

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. 2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. 3. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. 4. In another bowl, mix eggs, sugar, oil (or melted butter), and vanilla until smooth.
  5. 5. Fold the grated zucchini and chocolate chips into the wet mixture gently.
  6. 6. Spoon the batter into muffin cups, filling each about ¾ full.
  7. 7. Bake for 20-25 minutes until golden brown; a toothpick inserted should come out clean.
