  • 3 medium zucchinis, sliced thinly
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis thinly and sprinkle with salt. Let sit for 15 minutes to remove excess moisture.
  3. In a bowl, mix ricotta, eggs, half the Parmesan, and basil until smooth.
  4. Spread marinara sauce in the bottom of a baking dish. Layer zucchini slices, ricotta mixture, and mozzarella. Repeat until all ingredients are used.
  5. Cover with foil and bake for 30 minutes. Remove foil, add remaining mozzarella and Parmesan, then bake uncovered for another 15-20 minutes until bubbly.
  6. Let rest for 10-15 minutes before slicing.
