  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, brown sugar, pumpkin puree, vanilla extract, and egg until fluffy.
  3. Gradually mix in the flour, baking powder, cinnamon, and salt until just combined.

  5. In a small bowl, combine additional granulated sugar and cinnamon for coating. Roll each dough ball in this mixture before placing back on the sheet.
