  • 4 cups thinly sliced English cucumbers (about 2 large cucumbers)
  • 3 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 2 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced
  • Red pepper flakes (optional)

Instructions

  1. Wash and thinly slice the English cucumbers.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and optional red pepper flakes.
  3. In a large bowl, toss the sliced cucumbers with the dressing until evenly coated.
