  • 2 lbs boneless chicken thighs
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Chop onions and bell peppers; mince garlic.
  2. Heat olive oil in a large pot over medium-high heat. Sear chicken thighs until golden brown on both sides. Remove and set aside.
  3. In the same pot, sauté onions and bell peppers for about 5 minutes until softened.
  4. Add minced garlic, cumin, and oregano; cook for another minute until fragrant.
  5. Pour in tomato sauce and chicken broth, scraping up any browned bits from the pot.
  6. Return chicken to the pot, ensuring it’s submerged in sauce. Cover and simmer on low heat for 30 minutes.
  7. Serve over rice or with warm tortillas, garnished with fresh cilantro or lime wedges.
