  • 8 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 medium red bell pepper, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 green onions, sliced (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Start by washing and chopping the red bell pepper and mincing the garlic. Dice chicken breasts into bite-sized pieces.
  2. Boil a large pot of salted water. Cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving 1 cup of pasta water.
  3. In a large skillet over medium-high heat, add olive oil and diced chicken. Season with Cajun seasoning and cook until golden brown (5-7 minutes).
  4. Add chopped bell pepper and minced garlic to the skillet. Sauté until peppers soften (3-4 minutes).
  5. Pour in heavy cream and stir to combine. Let simmer until slightly thickened (3-5 minutes). If too thick, gradually add reserved pasta water.
  6. Toss the cooked pasta with the sauce in the skillet until well coated. Sprinkle with Parmesan cheese before serving.
