  • 3 lbs beef short ribs
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine
  • 2 large carrots, chopped
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the beef short ribs generously with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 8 minutes total.
  3. Remove the ribs from the pot; add onions and garlic to sauté until translucent, about 5 minutes.
  4. Pour in red wine and deglaze the pot, scraping up any browned bits for additional flavor. Simmer for about 3 minutes.
  5. Return short ribs to the pot along with carrots, beef broth, thyme, and rosemary. Stir well.
  6. Cover and braise in the preheated oven for 3 hours until fork-tender.
