  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the beets under running water, trim the greens while leaving about an inch of stem.
  3. Drizzle olive oil over the beets and sprinkle with salt and pepper; toss to coat.
  4. Wrap each beet individually in aluminum foil and place on a baking sheet.
  5. Roast for 45-60 minutes until fork-tender.
  6. Allow to cool for 10 minutes before unwrapping; peel skins off using your hands or a paper towel.
  7. Slice into wedges or rounds and serve warm or cold.
