  • 1 lb ground beef or chicken
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream (or Greek yogurt)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, brown the ground beef or chicken until cooked through.
  3. Add chopped onions and bell peppers; cook until softened (about 5 minutes). Season with salt and pepper.
  4. Stir in half of the enchilada sauce until meat mixture is well-coated.
  5. In an 8×12-inch baking dish, spread a bit of enchilada sauce on the bottom. Layer three corn tortillas, half the meat mixture, and a sprinkle of cheese.
  6. Repeat layering until ingredients are used up, finishing with enchilada sauce and cheese on top.
  7. Cover with foil; bake for 20 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  8. Let cool slightly before serving; garnish with sour cream and cilantro if desired.
