3 cups cooked penne pasta
2 cups pizza sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup sliced pepperoni (or substitute with sausage/veggies)
1 cup chopped bell peppers
1 cup chopped onions
1 tsp Italian seasoning
Instructions
Preheat your oven to 350°F (175°C). Grease a baking dish with nonstick spray.
Cook the pasta according to package directions until al dente; drain and set aside.
In a skillet over medium heat, sauté bell peppers and onions in olive oil until softened (about 5 minutes).
In a large bowl, mix cooked pasta, sautéed veggies, pizza sauce, half of the mozzarella and cheddar cheeses, and Italian seasoning until well combined.
Layer half of the pasta mixture in the greased baking dish. Top with pepperoni slices and then add remaining pasta mixture.
Sprinkle the remaining cheese on top and bake for 25-30 minutes or until golden brown and bubbly.
