  • 2 cups shredded cheddar cheese
  • 1 lb ground beef or turkey (cooked and seasoned)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1/2 cup sour cream
  • 1/2 cup jalapeños (fresh or pickled)
  • 1 cup salsa or pico de gallo
  • 1/4 cup green onions (chopped)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spread frozen tater tots in an even layer. Bake for about 25 minutes until golden brown and crispy.
  2. While the tater tots are baking, cook the ground beef or turkey in a skillet over medium heat until fully cooked. Drain excess fat and season with taco seasoning.
  3. In a large baking dish, layer half of the baked tater tots as the base. Sprinkle half of the shredded cheese on top so it melts easily.
  4. Evenly distribute the seasoned meat over the cheese layer followed by black beans and jalapeños.
  5. Add another layer of tater tots and top with remaining cheese. Return to the oven for about 10 minutes until bubbly.
  6. Remove from oven and add desired toppings like salsa, sour cream, and green onions before serving warm.
