  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes (about 1/4 cup)
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, minced garlic, chopped cilantro, honey, salt, and pepper in a bowl.
  2. Place chicken breasts in a resealable bag or shallow dish and pour half of the marinade over them. Allow to marinate for at least 30 minutes (or overnight for best results).
  3. Preheat your grill or oven to 375°F (190°C). Grill chicken on medium heat for about 6-7 minutes per side until fully cooked (internal temperature of 165°F) or bake in a greased dish for 25-30 minutes.
  4. Once cooked, drizzle remaining marinade over the chicken and let rest for 5 minutes before slicing.
  5. Serve with rice, in tacos, or as desired.
