  • 8 oz spaghetti or fettuccine
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley or basil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.
  2. In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
  3. Remove from heat and squeeze in fresh lemon juice. Season with salt and pepper.
  4. Drain pasta (reserve some cooking water) and add it to the skillet, tossing well to coat. Use reserved water if needed to loosen the sauce.
  5. Off heat, mix in Parmesan cheese and chopped herbs until combined.
  6. Plate hot, garnishing with extra herbs or cheese if desired.
