Salsa verde is a vibrant and zesty sauce that elevates any dish with its fresh, tangy flavor. Made from roasted tomatillos, cilantro, and jalapeños, this recipe is quick and easy to prepare, making it perfect for gatherings or a casual night in.   • 5 medium tomatillos (about 1 pound), husked and rinsed
  • 12 jalapeño peppers, stems removed (adjust based on spice preference)
  • 1 cup fresh cilantro leaves, chopped
  • 2 cloves garlic, peeled
  • Juice of 2 limes (about ¼ cup)
  • ½ teaspoon salt (to taste)

Instructions

  1. Preheat oven to 450°F (230°C). Line a baking sheet with foil and place tomatillos and jalapeños on it. Roast for 15-20 minutes until slightly charred.
  2. Remove from oven and let cool slightly. Transfer roasted tomatillos and jalapeños to a blender along with garlic and cilantro.
  3. Squeeze in lime juice and blend until smooth but slightly chunky.
  4. Taste and gradually add salt until desired flavor balance is achieved.
  5. Serve immediately or store in an airtight container in the fridge for up to one week.
