  • 3 lbs chuck roast
  • 4 dried Guajillo chilies
  • 2 dried Pasilla chilies
  • 1 cup chopped onion
  • 4 garlic cloves
  • 2 cups low-sodium beef broth
  • Juice of 2 limes
  • 1/2 cup chopped cilantro (for garnish)
  • 12 corn tortillas

Instructions

  1. Remove stems from dried chilies, shake out seeds, and chop onion.
  2. In a large pot, heat oil over medium heat. Sear the chuck roast on all sides (3-4 minutes per side).
  3. Combine soaked chilies, onion, garlic, beef broth, and lime juice in a blender. Blend until smooth.
  4. Pour sauce over seared meat. Bring to a gentle simmer on low heat for about 3 hours or until tender.
  5. Remove meat from pot and shred using two forks. Return to pot along with chopped cilantro; simmer for an additional 20 minutes.
  6. Warm tortillas in a skillet, fill with shredded beef mixture, top with onions and cilantro, and drizzle with lime juice.
