  • 2 large yellow onions, thinly sliced
  • 1 cup full-fat sour cream
  • ½ cup mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp fresh chives or green onions, finely chopped
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Slice the onions thinly.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the onions and cook until golden brown and fragrant, about 15-20 minutes.
  3. Let the caramelized onions cool slightly. In a mixing bowl, combine sour cream, mayonnaise, garlic powder, salt, and pepper until smooth.
  4. Gently fold in the cooled onions and chives (and cheddar if using) until well combined.
  5. Taste and adjust seasoning as needed. Transfer to a serving bowl and refrigerate for at least 30 minutes before serving.
