Homemade refried beans are a deliciously creamy and flavorful dish that transforms any meal into a fiesta.   • 1 cup dried pinto beans
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tsp ground cumin
  • 2 tbsp olive oil or lard
  • Salt and pepper to taste

Instructions

  1. Soak the pinto beans in water overnight.
  2. Drain and rinse the soaked beans, then combine them with broth in a large pot. Bring to a boil over medium heat.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add minced garlic and cook until golden.
  4. Once beans are tender (about 1 to 1.5 hours), drain them while reserving some broth. Add the beans to the skillet with onion and garlic.
  5. Stir in cumin, salt, and pepper; mash the mixture with a potato masher until creamy but still slightly chunky.
  6. Gradually add reserved broth until reaching your desired consistency; let simmer for an additional 10 minutes.
