  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1/4 cup milk (whole or low-fat)
  • 1/4 cup ketchup (plus more for topping)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian herbs

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Sauté the finely chopped onion in a skillet over medium heat until soft (about 5 minutes).
  3. In a large bowl, combine ground beef, sautéed onions, breadcrumbs, eggs, milk, ketchup, and seasonings. Mix gently until combined.
  4. Spoon the mixture into each muffin cup until three-quarters full.
  5. Bake in the preheated oven for 25-30 minutes or until golden brown on top. Optionally, add more ketchup during the last five minutes of baking.
  6. Allow to cool slightly before serving.
