  • 1 lb ground beef or lamb
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 1/2 cup butter
  • 1/2 cup flour
  • 4 cups milk
  • 1 cup grated Parmesan or Kefalotyri cheese
  • 2 large eggs
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente, drain, and set aside.
  2. Sauté chopped onion in olive oil until translucent, then add minced garlic and ground meat; cook until browned.
  3. Stir in crushed tomatoes with salt and pepper; simmer for about 20 minutes.
  4. For béchamel sauce, melt butter, whisk in flour to make a roux, then gradually add milk while stirring until thickened. Mix in nutmeg, salt, and pepper.
  5. Preheat oven to 350°F (175°C). Layer half the pasta in a baking dish, followed by half the meat mixture; repeat layering ending with pasta on top.
  6. Pour béchamel over final layer and sprinkle cheese on top. Bake uncovered for about 45 minutes or until golden brown.
