  • 1 bone-in prime rib roast (46 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Allow the prime rib roast to come to room temperature for about 1 hour before cooking. Preheat your oven to 450°F (232°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, and olive oil to form a paste. Rub this mixture all over the roast and season generously with salt and pepper.
  3. Place the seasoned roast in a hot roasting pan, fat side up, and sear at 450°F for 20 minutes until browned.
  4. Lower the oven temperature to 325°F (163°C) and continue roasting until desired doneness (about 1 hour for medium-rare at an internal temperature of 135°F).
  5. Remove from the oven and let it rest covered loosely with foil for at least 20 minutes before carving into slices.
